Flour processing using orange fleshed sweet potatoes PDF Print E-mail

This project was implemented by FCI in Busia, western Kenya.Orange fleshed sweet potato is a root-tuber grown for human consumption. The tuber is usually consumed boiled, mashed or roasted. Its juice can be extracted or the tuber dried and processed into flour.

After harvesting, the large and medium-sized tubers are usually sorted out for sale. Smaller ones are not accepted by customers. If not consumed at home, most of them go to waste. It is for this reason that this project was implemented.

Thirty training sessions were held in Busia Township to promote the use of these residues to grind flour. They were also trained on how to use this flour to prepare mandazis, porridge and other foods.
